Web browsers Firefox, Opera, Konqueror, Links2, Dillo Firefox is my general favourite, because it is good and also open source, and runs on many different operating systems.  Links2 and Dillo are really fast and lightweight, but won’t do everything.  Opera is not open source.
Office suiteLibreOffice, OpenOffice.org, Gnome Office and KOffice.Thank you, Sun! (For donating code for OpenOffice.org.)
AntiVirusAVG
Build environmentGCC, djgppThe GNU Compiler Collection; djgpp is a DOS port of it
Image editingThe GIMP
Sound editingAudacityThis has a good noise removal function, and I use it to record audio too.
Scoring MusicRosegarden and MuseScoreI use Rosegarden to convert Midi to score.  Handy to transpose music and print it out for B flat melody instruments, and others. MuseScore is a good program for writing out scores.
PrintingGSview, Ghostview and GhostscriptUsed to view and print postscript files
